Back Previous

This quick-bread is not only low-fat but also very moist and delicious. The MacKenzies have eaten this for years and have never tired of it.

Ingredients

1 teaspoon Baking soda
2 Bananas (medium ripe)
1 cup Blueberries (fresh or frozen)
2 Eggs
2 cups Flour
1/2 cup Oil
1/2 teaspoon Salt
1 cup Sugar
1 teaspoon Vanilla
1/2 cup Yogurt

Instructions

Grease and flour the bottoms of three 6" x 3 1/2" loaf pans.

Combine sugar and oil - beat well.
Add bananas, yogurt, vanilla and eggs; blend well.
Add flour, baking soda and salt; stir until dry ingredients are moistened.
Gently stir in the blueberries.

Bake at 350F for 40 - 50 minutes.

Remove from pans and cool on rack.

Enjoy!

This is what the MaxKenzies do with their blueberries from Tree-Berry Farm - all year long. In addition to buttermilk pancakes on the weekends, these three recepes (Lucy's Blueberry Pie, Blueberry Angel Cupcakes and Banana Blueberry Mini Loaves) keep our eight children happily in the blues.

Thank you for keeping such a wonderful tradition going and supplying endless summer memories.

Sincerely,
    the MacKenzies
