Blueberry Angel Cupcakes

This is a relatively new recipe for the macKenzies, but an instant winner. We have friends who supply us with eggs from their farm which makes this recepe easy to make, as it calls for practically a dozen eggs!

Ingredients

11 Egg whites
1 cup Flour
2 tablespoons Flour
1 1/2 cup Sugar
1 1/4 teaspoon Cream of Tartar
1/2 teaspoon Salt
1 teaspoon Vanilla extract
1 teaspoon Lemon (peels, grated)
1 1/2 cup Blueberries (fresh or frozen)

Glaze

1 cup Sugar, confectioners
3 tablespoons Lemon juice

Instructions

Beat egg whites until foamy.
Add cream of tartar and salt.
Beat until soft peaks form.
Add vanilla and lemon peels.
Add 1 cup (of the 1 1/2 cups) of sugar.

Gradually fold the flour mixture into the peaks.
Fold in the blueberries.
Fill lined (paper) muffin cups.

Bake at 375°C for 14 to 17 minutes.

Remove and cool on rack.
